MicroMeals: Banana Bread

Ingredients
Cooking spray
3 tbs flour
1 tbs + 1 tsp sugar
2 tbs brown sugar
1/8 tsp salt
1/8 tsp baking powder
1/8 tsp baking soda
1 egg (for vegans substitute egg with an additional 2 tbs of water, 1 tbs of oil and 2 tsp of baking powder)
1/4 tsp vanilla extract
1 tbs vegetable oil
1 tbs milk (or soymilk)
1 mashed banana
Steps:
- Spray entire inside of mug with cooking spray
- In mug, combine all dry ingredients (except banana)
- Stir in the egg
- Add milk, vanilla, oil and banana. Mix together
- Place in microwave for up to 3 minutes (check at regular 30-45 second intervals)
- From experience, the bread will be SUPER hot. Let it sit and cool in the mug for a few minutes
